Quench Your Thirst with an Icoberry Spritzer

With blue skin so dark it is nearly black, the icoberry is a fairly common fruit found across much of the Alpha and Beta quadrants. It is a biennial, meaning that any given icoberry bush will produce heavily only every other year; so competent farmers know to stagger their crops for an annual harvest, ensuring they have enough produce to sell to planets like Risa.
Pick the fruit at its peak and use its lush purple juice to make a refreshing spritzer!
Icoberry Spritzer Recipe
Preparation: 5 minutes
Baking: 10 minutes
Chilling: 1 hour
Makes: 4+ servings
Ingredients
- 8 ounces blueberries
- 6 ounces blackberries
- 1 tablespoon fresh lime juice
- 1⁄2 cup sugar
- Seltzer, to top up
Directions
1. In a medium saucepan, combine the berries, sugar, and 1 cup water. Cook over medium-low heat, mashing the berries occasionally, until no large pieces remain, 5 to 10 minutes.
2. Puree with an immersion blender, then pour through a sieve into a bowl (discard the seeds). Add the lime juice and refrigerate until well chilled, about 1 hour.
3. To serve, combine in a 1:1 ratio with an unflavored or citrus seltzer.
4. Note: For an alcoholic version, substitute prosecco or Champagne for the seltzer.
